So So Good Apple Muffins @ Every Day is the Weekend!
what these muffins don't have in beauty, they make up for in taste


Oh my yes, these apple muffins are so so good!  Ok, they may not be as good as the pumpkin muffins, but we've got to see.  They may be almost as close.  I've noticed that the longer the muffins stay in my freezer, the better they taste.  Maybe they need time for those spices to meld. 

 

This apple muffin recipe is a revised version of the pumpkin muffin recipe, so you know it is gooooood!

So So Good Apple Muffins

(makes 18 muffins)

 

2 1/2 C all purpose flour

1 C sugar

3/4 C brown sugar, packed

1 1/4 t apple pie spice

1 1/2 t baking soda

1 1/2 t baking powder

1/4 + 1/8 t salt

1 1/2 C peeled, sliced, & pureed apples

1/2 C coconut oil

6 T butter, melted (not margarine)

1/3 C applesauce (or Mott's snack size cup)

3 extra large eggs

1 1/2 t pure vanilla extract

 

topping:

1 1/4 C all purpose flour

1/2 C brown sugar, packed

1/4 C sugar

1 t apple pie spice

1/2 C butter, melted (not margarine)

1/2 - 1 C hand broken pecans

 

Preheat oven to 350 degrees.  Mix first 7 dry ingredients in large bowl.  Mix last 6 ingredients in mixing bowl using medium speed on mixer.  Mix well.  Add dry ingredients to wet ingredients in mixing bowl.  Mix well on medium speed. 

 

Note: When preparing the apples, I used "past their prime" apples that we'd gotten at the apple orchard, so they were a little dried out.  While pureeing them, I had to add a little water back to them to get them back to the proper consistency  ... say to that of applesauce.  Great use for "past their prime" apples.

 

Topping: Mix all the dry ingredients for the topping in a medium bowl.  Add melted butter and mix.  Add pecans and mix.

 

Spray muffin tins with Bakers Joy.  Use large scoop to scoop batter into muffin cups.  Fill 1/2 to almost full making sure all cups are evenly filled.  Sprinkle topping on top of batter using all the topping.  Pat down lightly.  It's important that you leave none of that topping in the bowl!  This is where the party's at!!!

 

Bake at 350 degrees for 35 minutes.  Let cool.  Eat one to make sure they're good and then freeze the rest in freezer storage bags.

~ Little Gadget Wizardry ~

This is a little gadget that I picked up for $10 at Kohl's several years ago.  It has been well worth the $10!  Since getting it, I have not gotten my food processor out once.  This is like a mini food processor.  It holds about a cup.  It's easy to use, clean and then easily hides away again in the cabinet.  I love it.  No muss, no fuss.  And as you can see, I used it to puree the apples for the muffins. 

 

I also got a new black apron.  Since I started spending so much time in the kitchen baking and cooking I was starting to ruin my clothes with stains, so an apron was a must.  Picked up a plain black, bib apron on Amazon for about $10.  Love it.  Now I don't have to worry all the time about leaning into stuff and stuff splattering onto my clothes.  Now I really am like Martha Stewart. ;)
