10.26.15  Yummy Pumpkin Muffins!


If you try these muffins, you can thank me later.  :)  They are sooooo good!  Of course, I got the recipe from Pinterest, but of course, I had to change it up.  I haven't been a fan of pumpkin all that long.  I started out only eating pumpkin pie.  And the only reason I even started eating that was because of a recipe that looked so delicious in Southern Living that I had to try it.  (Being from the South, I grew up eating sweet potatoe pie.  My Mamaw made the BEST sweet potato pie.)  And of course, that Southern Living recipe was delicious and converted me to a pumpkin pie eater.  THEN, last year on vacation in Charleston, my husband bought me a Pumpkin Muffin at Starbucks for breakfast one morning.  OMG, I fell in love!!!  So a couple of weeks ago I went in search of a pumpkin muffin recipe and I found one with a glowing recommendation.  And they were so right!  The topping on this muffin is the hit of the party!

Wait .... I just remembered, I actually took a bread recipe and turned it into muffins.  It made exactly 12 good sized muffins.

I used only white flour and just because I didn't take my time measuring, it increased the amounts of sugar.  I used 3/4 C white sugar and 1/2 C brown sugar in the muffin mix.  I also added chopped pecans to the topping. 


I sprayed a regular sized muffin tin with Baker's Joy for greasing.  Works like a charm! Then took a large size scooper and scooped the batter into the tin. Then smashed the topping down onto the top using almost all of it.  It's so good you won't want to waste any of it!!!

I don't know about this recipe being healthy, but it sure is good.  And it definitely took me a lot longer than 10 min. to whip it up.  


If you try these, not only will you enjoy the muffins themselves, but the smell as well.  I had a friend stop by and she commented on how good my house smelled.  She said it smelled like fall.  I couldn't figure out what she'd smelled, since we'd just gotten back from a week long vacation.  Later, I realized she was smelling the muffin I'd warmed up that morning for my breakfast!  Oh yes, I forgot ... they freeze great, too!  After they cool, put them into freezer bags and store them in the freezer.  When needed, pop one in the microwave for 30 secs and they are delicious!  Enjoy!

PS - I liked these so much I used them in a "welcome basket" for the same friend who stopped by and loved the smell ;) .
